Lemon Muffins


1 stick butter at room temp. (1/2 c.)
1 c. sugar
2 eggs
1/2 c. milk
Zest of one large lemon
Juice of one large lemon
1 1/2 c. flour
1 t. baking powder
1/2 t. salt
Preheat oven to 350 degrees.
Beat butter and sugar for 2 minutes
Add eggs one at a time mixing well between additions
Combine flour, baking powder and salt.
Add flour mixture to the butter mixture along with the
milk, lemon zest and lemon juice.
Make sure to scrape the sides of your bowl a few times.
Use cupcake liners or a prepared muffin pan.
Bake for 20 min.
Let cool 10 min. and remove from pan.
Optional: heat 1/4 c. sugar and the juice of another lemon. After removing muffins from pan, poke holes in the tops with a fork. Pour lemon syrup over muffins. Finish by sifting powdered sugar over tops of muffins.
