Strawberry Bruschetta



1 1/2 cups sliced fresh strawberries

1 peach, diced

1 cup quartered grape tomatoes

thinly sliced fresh basil

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon sugar

1 teaspoon freshly ground pepper

1/4 teaspoon salt

1 French bread baguette

1 goat cheese log, softened

Balsamic reduction

~For the balsamic reduction, pour balsamic vinegar into a small saucepan, bring to a simmer over medium heat. Reduce to low, and simmer until the vinegar has reduced to 1/4 cup, about 15 minutes. Set aside and cool.

~Stir together strawberries, nectarine, grape tomatoes, olive oil, balsamic vinegar, sugar, freshly ground pepper, and salt.

~Slice your baguette and toast in oven until golden. Spread the toasted side of bread with softened goat cheese and top with strawberry mixture. Add the fresh basil and drizzle the balsamic reduction on top. enjoy!
