pumpkin donut muffin with brown sugar glaze


~what you will need…

1¾ c flour
¾ c granulated sugar
2 t baking powder
½ t salt
1 t nutmeg
1 t cinnamon
⅓ c oil
1 egg, large
¾ c pumpkin puree
½ c milk
1 t vanilla

~what to do…

Preheat oven to 350 degrees F.
Spray jumbo muffin pan with baking spray.
Mix dry ingredients in a large bowl.
Mix wet ingredients in a small bowl.
Add the wet ingredients to the dry.
Divide among the six cups.
Bake for 25 minutes.

~make the glaze, melt 2 tablespoons of butter with 2 heaping tablespoon of heavy cream over low heat. Slowly whisk in 1/4 cup of brown sugar until fully melted. Whisk in 1/2 cup of confectioner’s sugar. Spoon immediately on slightly cooled muffins.
