Pumpkin Muffins with Maple Icing

~what you will need…
1 and 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1/2 cup brown sugar
2 large eggs
1 cup pumpkin puree
1/2 cup vegetable oil
1/3 cup milk
1 teaspoon vanilla extract

~what to do…
Preheat oven to 350F degrees. Spray jumbo muffin pans with non-stick spray or line with cupcake liners. Set aside.

In a large bowl, toss the flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice together until combined. Set aside.

In a medium bowl, whisk the brown sugar and eggs together until combined. Whisk in the pumpkin, oil, milk, and vanilla until combined. Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter evenly into pan. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean.

Maple Glaze

~what you will need…
1 cup powdered sugar
1 tablespoon pure maple syrup
2 tablespoons milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon pumpkin pie spice

To glaze the muffins, combine all of the glaze ingredients in a small bowl with a whisk. Dip the muffins into the glaze.
