Flourless Double Chocolate Cookies

2 1⁄4 cups confectioners’ sugar

1⁄4 teaspoon salt

1 cup Dutch-processed dark cocoa powder

3 egg whites, large

1/2 cup mini chocolate chips

2 teaspoons vanilla extract

Preheat oven to 350.

Lightly grease baking sheets.

Stir together all of the ingredients till smooth.

Roll batter-like dough into 1 inch round balls place on the prepared baking sheets, pat down into circles

Bake cookies for 8-10 minutes; they should spread, become somewhat shiny, and develop faintly crackly tops.

Remove cookies from oven and allow to cool right on the pan.
