1/3 cup vegetable oil
1 cup buttermilk
2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1/2 cup sugar
1/4 cup brown sugar
1/2 cup dark cocoa powder (Hershey’s Special Dark)
2 cups flour
1 cup mini chocolate chips
Heat oven to 350 degrees.
Line muffin tin with liners.
Mix oil, buttermilk, eggs and vanilla together in a bowl.
In a separate bowl whisk salt, baking soda, baking powder, sugars, dark cocoa powder and flour together.
Using rubber spatula, fold egg mixture into flour mixture and 1 cup mini chocolate chips do not over mix.
divide batter equally among 8 muffin cups.
Bake at 350 for 20~22 minutes until muffin tops are just firm.
Can add a chocolate glaze or dust with powered sugar.
